Any time anyone tells me they just don’t like vegetables – across the board hates them – I have the obligation to say, “Perhaps you just haven’t had them the right way?!”
I have a very hard time believing that all vegetables are hated. They are SO different. You can’t compare a sweet potato with a brussel sprout with a green bean!
I know some vegetables have a weird texture. Others have a funky smell, or perhaps look completely intimidating! The mushroom for example has strange funk and bizarre texture that is indeed off-putting IF prepared in certain ways. The artichoke is just scary looking, and if you are not a chef or an Italian grandmother, you have NO idea what to do with it. Brussel sprouts if boiled to a pulp just reek of sulfur. Okra is another strange one, emitting some weird slimy goop when cooked.
HOWEVER, SO, what I am saying is – GIVE VEGGIES A TRY SEVERAL DIFFERENT WAYS before you cast them aside.
Many people were brought up on canned or boiled vegetables, and neither method does the poor vegetable any justice. Frozen vegetables, while a good alternative, can still suck the life out of the veggie and leave it limp or mushy. Nothing beats fresh. So try to work with fresh in-season vegetables when you can. It will make a world of difference, I promise.
When vegetables are raw, they taste one way. Then you steam them, and a new flavor develops. Add some oil and garlic in a quick sauté and you have yet another flavor profile. Then roast them and WOW – watch their flavor POP!
Some get sweeter, some more bitter, some which are crunchy raw get gorgeously soft when cooked. You may not love a raw carrot, but you may love it roasted, or in a creamy soup.
SO TRY THEM.
AND UNTIL YOU DO….
I DON’T LIKE ANY VEGETABLES!
Because that’s just not fair.
And PLEASE PLEASE PLEASE add a bit of sea salt. It’s ok! And makes a HUGE difference.
